Paşaeli Çakal

Çakal variety is native to north Kaz Dağları (aka Mount Ida), close to the site of ancient Troy. It is a variety that was close to exctinction due to its pinkish red skins as it is only suitable for making rose wines. We have been re-planting the variety in our own vineyard to save it for the future generations. It is fermented in stainless steel tanks at a temperature of 18C and aged on its lees for 3

months to provide complexity. Very pale pink colour with a delicate aromas of stone-fruit and plum. Stony and spicy too. On the palate same delicate and elegant flavours with a big presence in the mouth.
